Joan’s Broccoli + Stilton Soup

This is the most delicious soup – it’s perfect on cold, rainy winter days. It’s a wonderful bowl of goodness. This is my friends Mam’s recipe, I pre-order it now whenever she comes down to stay and managed to pry the recipe out of her head the other day after she presented me with a huge flask of the magical concoction.

1 onion

3 heads of brocolli

3 carrots

3 sticks of celery

2 large potatoes

2-3 litres of chicken stock (3 stock cubes, can be vegetable if vegetarian)

280g stilton cheese

– Peel and roughly chop all the vegetables. Place in a saucepan along with the stock. Bring to the boil and simmer for 20 minutes.

 – Roughly chop the stilton and add to the pan. Stir and simmer for a further 20 minutes.

– Transfer to a liquidizer (I have a Vitamix but a NutriBullett or similar will work perfectly here too) and blitz. Re-heat and eat immediately or store in the fridge for up to 3 days.

    I am known for my terrible soup making skills but this recipie has changed everything, tastes amazing! Just like something you would get in lovely little bistro. Thanks for sharing! x x
